I thinned my beets today, and discovered that the beautiful beet thinnings work perfectly in my favorite beet salad recipe. Since my beets aren't mature enough to pick yet, I simply omitted the roasted beets and used the thinnings in place of the salad greens and beets. Yum, yum, yum! And, beautiful to look at too!
